Celebrate Mom!

Spring is finally here.  The flowers are blooming and the weather is starting to warm up.  Doesn’t it feel great to see the sun again :)  As  we enter into a new month we have some great weekends ahead of us – Mother’s Day, The Rankin Run and the Long Weekend.  It will definitely be a busy month for BBQ’ing.

One of my favourite memories for celebrating Mother’s Day was a family dinner and bringing mom a card and flowers.  One of my favourite dinners consisted of a delicious baked Beef Tenderloin with some baby potatoes and a champagne mousse dessert (delicious recipe to follow next week ).  I was looking for this recipe early this week so that I could make the same dinner with my family and found it tucked away in my recipe book.  Thought I would share it with you guys.

Beef Tenderloin with Blue Cheese and Colby Sauce

Microwave a piece of Blue Cheese (a good chunk) until it turns into a paste.
Spread the blue cheese on the top side of the beef tenderloin until covered.
Lightly add Colby sauce(or your favorite BBQ sauce) and spread over tenderloin.
Place tenderloin in a casserole dish or baking sheet
Preheat oven to 400 degrees
Place meat in oven and sear for 10 min. UNCOVERED
Reduce temp. to 350
Roast for approx. 45 min. or until the internal temp. is 140 degrees, for rare
Let stand for 10 min.
