Lemon Chicken

Start with Fresh Ontario Skinless Boneless Chicken Breasts from Goeman’s Lakeshore Meats.

Take each boneless chicken breast and place between 2 pieces of wax paper and using a meat mallet, hammer to flatten.

Dredge each breast in ( ½ cup of flour, ½ tsp. salt, 1 tsp. pepper, ½ tsp. paprika and a touch of garlic powder- optional.) and shake off excess.

Heat equal amount of butter and virgin olive oil in Sauté’ pan until lightly bubbling

Add chicken breasts and lightly brown on each side

Remove chicken

Deglaze- adding ½ cup white wine or water, add some fresh squeezed lemon juice, scraping the residue from the bottom and stirring occasionally.

Return chicken and add 2 cloves of garlic crushed and add several slices of lemon to the top of the chicken. Cover and let simmer for approx. 12 min. and turn burner off.

Serve with fettuccine or rice.
