Prime Rib Roast

This is one of our favorite recipes for doing Prime Rib Roasts
Ingredients based on an 8 lb. roast

½ bottle of dry red wine
½ bottle of your favorite bbq sauce
about ½ “ of freshly ground ginger root
3 cloves garlic- finely chopped.

Mix and add to roasting pan with roast and marinate over-night covered
Remove marinade and save
Place roast in roasting pan and remember NOT TO COVER
Preheat oven to 400 degrees F
Put roast in oven, with 2 cups of the marinade poured over top
Sear for 20 minutes and reduce to 350 degrees
Roast for approx. 25 min./lb or until the internal temp. reaches 140 degrees for med. rare
Let stand for 15 min. before slicing to let the juice congeal
The roast will pick-up approx. another 5 degrees while letting it stand

If you do not have a meat thermometer you should get one and use it religiously. I prefer a digital type
